Dice up all your veggies. Be sure to get all the seeds out of your japlepeno and wash your hands well after handling. Set them aside. Grate your cheese, as much as you want. Cut about the corn tortillas into thin (1/2 inch) strips. Heat some butter in a skillet. Throw in tortilla strips and toss around for about 2 minutes until they are a little crispy. Set aside on plate. Add some more butter to the skillet and scramble your eggs up. When they are almost done add your veggies, cheese, and the tortilla strips. Cook until not runny and all threats of salmonella poisoning are gone. You can add other veggies like mushrooms, onions, bell peppers, or meat, like crumbled bacon or chorizo. The combinations are endless. Green Chili Hash Brown Casserole
Preheat oven to 400°F. Stir hash browns, green chilies, cream of chicken soup, cheddar cheese and sour cream in large bowl to blend. This can be messy, so make sure it is a pretty big bowl. Transfer mixture to 13x9x2-inch glass baking dish. Cover with foil and bake 30 minutes. Uncover and bake until top is golden brown, about 45 minutes. This makes a lot of casserole. It's OK though eat half on Saturday morning, cover it back up with foil and stick it in the fridge to heat up and have on Sunday morning! |
