GRILLED MANGOS

Mangos (as many as recipe calls for) Oil for grill

Prepare the grill to low flame or glowing coals. Cut Fresh ripe mango straight down both sides running knife parallel to pit. Using the tip of a knife score each half of the mango in a criss cross pattern, being careful not to puncture the skin.

Place Mangos flesh side down on oiled grill for 2 minutes. When cool, hold each side flesh side up, and using your forefingers, press the skin inside out to force the cubes to pop up and making them easy to remove.

At this point what you do with your grilled mango is up to you. The grilled flavor would be nice in any of the listed mango recipes. You could serve it as is with a scoop of ice cream for a dessert. Or toss with some cooked turkey and chicken chunks into a spinach salad.
