Mango Quesadillas

1 diced ripe mango 1 poblanos pepper cut into strips
1 brick fat free cream cheese Cilantro chopped
8 tortillas

Broil pepper under a preheated broiler about 2 inches from heat, turning every 5 minutes, 15 to 20 minutes, or until skins are blistered and charred. Remove from oven and let cool, then peel off charred skin and cut pepper into strips. Smear one side of each tortilla with cream cheese.

On one tortilla layer several slices of pepper, diced mangos and a sprinkle of cilantro. Continue using even amounts of mango, cilantro and pepper so that all 4 quesadillas have the same amount. Place all 4 quesadillas on a cookie sheet. Put cookie sheet into preheated oven at 350 for 5 minutes, or until heated through and tortilla looks toasted. Remove from oven and cut each quesadilla into 4 quarter sections. Serve with salsa.
